Coconut Tahini Dressing


Prep: 15 minutes | Serves: 4 - 6

Simple perfection! I love this simple and quick recipe as a dressing for salads of all kinds. Try it on my Kale with Sweet Potatoes and Quinoa salad. Yum!

Ingredients:

1 cup raw cashews (soaked in water for 15 minutes)

1/3 cup coconut water

2 Medjool dates (Pitted)

1 tsp raw honey

1 Tbsp Raw Tahini

1 Tbsp fresh lemon juice

1/4 - 1/2 cup water (as desired thickness)

pinch of sea salt

directions:

Place the cashews in a small bowl and cover with water. Soak for 15 minutes. Drain the cashews and add them, along with remaining ingredients, to a high speed blender. Blend on high speed until mixture is well whipped to a creamy consistency. Add water to desired thickness. Drizzle over salad and enjoy!
