Try this cooling and cleansing soup when the weather is hot or when you are looking for a quick and light meal. Serve all by itself or with gluten free crackers and a side of fruit. Simply delicious and oh so healthy!
1 large cucumber, cut into chunks
2 Stalks celery, roughly chopped
Juice from 1/2 lemon
dash of sea salt
2 Tbsp fresh dill or 1 tsp dried dill
3/4 cup purified water (more or less for your desired thickness)
Garnish: chopped green bell pepper, chives, additional dill and cracked black pepper
Add all ingredients into a blender and blend until smooth and creamy. Pour into a bowl and garnish with more fresh (or dried) dill, green pepper, and black pepper. Enjoy!
