Cucumber and Avocado Soup

Prep time: 10 minutes | Serves 1-2

Try this cooling and cleansing soup when the weather is hot or when you are looking for a quick and light meal. Serve all by itself (very light so it keeps the mind clear) or with homemade/gluten free crackers Simply delicious and oh so healthy!

Ingredients:

1 large cucumber, cut into chunks

2 Stalks celery, roughly chopped

1/2 Avocado

Juice from 1/2 lemon

dash of sea salt

2 Tbsp fresh dill or 1/2 tsp dried dill

3/4 cup purified water (more or less for your desired thickness)

Garnish: chopped green bell pepper, additional dill and cracked black pepper

Directions:

Add all ingredients into a blender and blend until smooth and creamy. Pour into a bowl and garnish with more fresh (or dried) dill, green pepper, and black pepper. Enjoy!
