Waldorf Salad (Vegan)

One of my all time favorite recipes. A healthier version of traditional Waldorf salad. Simple ingredients and sooo delicious. Makes a wonderful lunch, picnic, or light dinner. Salad: • 2 large apples - chopped (I like honey crisp, Pink Lady, or Gala) • 1 tablespoon lemon juice • 3 medium stalks celery - chopped on diagonal • 1 cup red or green grapes - cut in half • 1/3 cup golden raisins • Handful of chopped walnuts

To Serve:

• Assorted Greens (field greens, baby lettuces, etc...)

or Romain lettuce hearts.

Dressing: • 1 med zucchini (about 1-1/2 cups) • 1 scallion (Greens only) • 2 Medjool dates - soaked for 15 minutes • 1/4 cup raw cashews - soaked for 30 min • 1 tablespoon lemon juice • 2 mint leaves • 2 tablespoons chopped parsley • Coconut water as needed for blending

Directions:

Chop salad ingredients and place in a bowl then add 1 tablespoon of the lemon juice. Mix together and set aside while you prepare the dressing (lemon juice helps keep apples from turning brown). For the dressing, blend all dressing ingredients (except parsley) in a high speed blender till creamy. Pour prepared dressing over salad and stir till blended. Sprinkle on the parsley. Plate your assorted greens as a base, then top with a generous portion of salad.

This salad works well as a lunch, picnic, or light dinner. Enjoy!
