Vegan Waldorf Salad

One of my all time favorite recipes, my healthier version of a Waldorf salad. Choose your desired version of low fat, or fat free. Sooo delicious. Salad: • 2 apples - chopped (I like Pink Lady or Gala) • 1 tablespoon lemon juice • 3 stalks celery - chopped on diagonal • 1 cup grapes - cut in half (combo reg/green) • 1/3 cup raisins - golden or Thompson • Handful of chopped walnuts (*omit for fat free version)

To Serve:

• Assorted Greens (field greens, baby lettuces, etc...)

Dressing: • 1 med zucchini (about 1-1/2 cups) • 1 scallion (Greens only) • 2 Medjool dates - soaked for 15 minutes • 1/4 cup raw cashews - soaked for 30 min (*omit for fat free version) • 2 tablespoon lemon juice (divided) • 2 mint leaves • 2 tablespoons chopped parsley • Coconut water as needed for blending


Chop salad ingredients and place in a bowl then add 1 tablespoon of the lemon juice. Mix together and set aside while you prepare the dressing (lemon juice helps keep apples from turning brown). For the dressing, blend all dressing ingredients (except parsley) in a high speed blender till creamy. Pour prepared dressing over salad and stir till blended. Sprinkle on the parsley. Plate your assorted greens as a base, then top with a generous portion of salad.

This salad works well as a lunch, picnic, adrenal snack, or light supper. Enjoy!

Serves 2 - 3 (one if you are really hungry)
