These figgy bars are delicious and extremely fast and easy to make. Excellent for last a minute dessert or as an after school treat.
• 8-10 dried figs • 3 Medjool dates (pitted) • 3/4 cup pecans (or nut of choice) • 1 tablespoon lemon juice • 1/4 cup raw flaked coconut. plus extra for topping • 1/2 teaspoon cinnamon Place all ingredients in a food processor and process till well blended. Place onto a plate and shape mixture into a 6x6 square (about 1 inch thick). Top with remaining flaked coconut. Cut into small squares and serve. - makes 6 bars.
