Cucumber & Tomato Salad

Mmmmmm what's for lunch (or dinner)? Fresh cucumber & tomato salad with dates and sweet mango dressing!!!! 😊🥗

This simple salad is powerhouse of nutrients which help to cleanse, detoxify, and to support the adrenal glands. Mango flushes toxins from the body while cucumber provides critical hydration and electrolytes. 🍅 Tomatoes provide anti-oxidants and boost the immune system. Dates are rich in potassium and provide energy. What a powerful combination!!!!

Salad Ingredients:

2 cucumbers, sliced (and halved)

3 cups fresh tomatoes, chopped

6 Medjool dates, pitted and chopped

3-4 scallions, chopped (green part only)

Mango Dressing:

2 cups mango

6 Medjool dates, pitted

1/2 cup water or coconut water (more as needed)

Puree in a blender to make a dressing.

Directions:

Combine all salad ingredients in a bowl, then arrange on a plate and drizzle with ample amounts of the mango dressing.

Serves 2 as a main dish, Serves 4 as a side dish.
