Wild Blueberry Tart


This delicious and easy to make tart is completely healthy and guilt free. No sugar, no flour, no butter, no baking etc…. Just lots of healthy fresh blueberries, dates, nuts, raw coconut, and lemon. It is absolutely decedent…… I serve this dessert during holiday gatherings, and it is always a hit. Yum! This tart recipe can also be made into individual tartlets, instead of making a whole tart. To do this, simply divide the crust into small bite-sized balls. Then form each ball into a little cup to hold the filling. Smashing presentation for a holiday party! Live healthy and enjoy!!

Crust:

2 cups nuts – 1 cup pecans, and 1 cup walnuts

1 cup raw flaked coconut

1/2 tsp. lemon zest

1/2 cup dates

1/8 tsp. sea salt (optional)

In a food processor add the nuts, coconut, lemon zest, and salt. Pulse until the mixture is well crumbled. Add in the dates and then continue pulsing until the dates are well incorporated and the mixture begins to form into clumps. Transfer the entire mixture to a 9 inch tart pan with fluted sides and removable bottom. If you do not have a tart pan, just use a standard 9 inch pie pan and line with plastic wrap. Press the mixture evenly along the bottom and up the sides to form a shell. Be sure to press it well, as this will help make the crust sturdy for cutting.

Filling:

2 cups of organic wild blueberries (or cultivated blueberries)

15-17 Medjool dates, pitted (or date of your choice)

2 tsp. Raw Honey

1 tablespoon lemon juice

In a food processor, add all ingredients and blend till smooth. You may need to adjust the number of dates according to the sweetness you like. So keep tasting the filling as you go. Till tastes - just right. Fill the prepared tart shell with the filling and garnish as desired. Chill for a least two hours. After it is chilled carefully remove tart shell from the pan and place the tart on a pretty cake stand or decorative plate. It makes a beautiful presentation!

Garnish ideas: Red raspberries, blueberries, mint leaves, lemon zest curls, strawberries. You could also top with a dollop of cashew whipped cream, if desired.
